The rules on Long Island
Nassau and Suffolk do it differently
Long Island is two counties with two sets of rules. Here is what each one requires.
Nassau County
Enforced by the Nassau County Fire Marshal under the Nassau County Fire Prevention Ordinance.
New kitchen systems in Nassau go through plan review and an acceptance test with the Fire Marshal's office. We draw the plans in-house, install the system and file the work reports.
All Nassau County fire code requirementsSuffolk County
Enforced by the Town and village fire marshals, with the Suffolk County Fire Marshal's Office under the Fire Code of New York State.
Suffolk County also requires a county license for technicians who service fixed extinguishing systems such as kitchen hood suppression. Permits for new systems go through the town or village.

Kitchen hood suppression on Long Island: what to know
Every 6 months, in both Nassau and Suffolk, and again after any discharge. Fusible links are replaced every year. In Nassau the work report is filed with the Fire Marshal; in Suffolk a certificate of inspection goes to the town or village fire code official.
In Nassau County, the Nassau County Fire Marshal reviews the plans and witnesses an acceptance test. In Suffolk County, the permit and plan approval go through the town or village where the business is. Central Fire draws the plans and handles the submission either way.
The system has to be cleaned up, recharged, reset and serviced before you cook again, and the fusible links replaced. Call us and we will get you back up and running as quickly as possible.
Central Fire is an authorized Buckeye and Badger dealer and works on the major wet chemical restaurant systems. Tell us what is on your hood and we will confirm.
