The FDNY rules
New York City has its own fire code
- Extinguishers
- Serviced every year by an FDNY-approved company; the technician holds an FDNY W-96 Certificate of Fitness and hangs an FDNY tag.
- Kitchen systems
- Inspected and serviced every six months by a technician with an FDNY S-17 Certificate of Fitness. New systems need filed plans, a permit and an FDNY-witnessed test.
- Hood cleaning
- At least every three months in New York City, by an FDNY-approved company, with a numbered decal on the hood.
- Sprinklers
- Inspected and tested by a person holding an FDNY S-12 Certificate of Fitness.

Questions
Fire protection in NYC: common questions

Restaurants also need the kitchen hood suppression system serviced every six months and the hood and ducts cleaned at least every three months. Buildings with sprinklers need them inspected and tested on schedule. Central Fire handles all of these under one account.
The FDNY Bureau of Fire Prevention enforces the New York City Fire Code, which is separate from the rest of New York State. FDNY inspectors check the tags, certificates and paperwork, and can issue violation orders and summonses.
